The Recipes….
And, the recipe….
A couple cups of great northern beans (soaked for a couple of hours, if not overnight)
Four onions, sliced
A 2 and 1/2 cups of apples, seed and slice em
Enough water to cover beans for cooking (4 to 6 cups)
1 TBSP mustard powder
Molasses 2 TBSP
2 tsp sea salt
Maple syrup, 1/3 of a cup and some, I like it sweet
½ cup of tomato paste
Touch of oil, olive, corn…whatever works for you…but, just a drizzle to sauté your onions….but, first:
Step one, cook your beans:
You’ve got two choices with the beans, boil them (a little over an hour) or pressure-cook them, a few minutes (15) until tender, not soft..
But, cook your beans….
All the while sauté:
Onions in your drizzle of oil and till they are golden brown and brilliant! Put aside and get ready to add it all to your cooked beans….
When beans are cooked, drain and put in baking dish then add:
Apples
Onions
And…everything else
Fold it in…cover
And, bake it at 200-250 for 4 hours….
I serve, the most amazing baked beans I’ve ever tasted, with a dollop of soy sour cream and…well, you’ll see.
Enjoy!
