The Best Lentil Soup
Enjoy...
INGREDIENTS
1 cup dried brown lentils
4 cups organic vegetable broth
1 large can stewed tomatoes
1 tablespoons olive oil
3 garlic cloves, diced
1 medium onion, diced
3 large carrots, peeled and sliced
2 celery stalks, chopped
1 bay leaf
2 tablespoons apple cider vinegar (or balsamic)
salt and pepper to taste
DIRECTIONS
Pour lentils in a bowl, covering with water, and allow to sit overnight.
Over medium heat, cook onions in olive oil in a large soup pan. Add garlic and celery. Once celery begins to soften, add carrots, tomatoes, bay leaf and vegetable stock.
Pour in drained lentils.
Bring to a boil, reduce heat, and allow the soup to simmer for about an hour.
Season with salt and pepper to taste.
Options: Add leftover vegetables, a splash of fresh lemon juice and a Tbsp. of sour cream substitute (soy or rice) to each serving.

With Sweet Potatoes

Mashed Sweet Potatoes
INGREDIENTS:
4 medium sweet potatoes, peeled and cubed
1/2 cup orange juice
1 tsp orange zest
¼ cup real maple syrup
1/2 tsp cinnamon
1/2 tsp ground ginger
PREPARATION:
Put a large pot of water on the stove and bring to a boil. (Even healthier, steam them so you don’t boil away all of the nutrients). Add sweet potatoes and cook for 20-25 minutes until tender. Drain sweet potatoes; add orange juice, orange zest, maple syrup, cinnamon and ginger. Mash until smooth.
Eat a huge bowl and you’ll be fueled up for hours.
